Weeknights are hectic for everyone, that’s why I love quick and easy meals. You don’t have to give up flavor or nutrition with this recipe, and you can still have dinner on the table within 30 minutes!
1 1/2- 2 lbs. Chicken Tenders
2 Tbs. Ghee or Olive Oil
1 tsp. Lemon Pepper Season Blend
1/2 tsp. dried Oregano
1/2 tsp. Salt
1 package of Flat Bread or Naan (usually come 4 or 5 to the pack)
1 recipe of Tzatziki Sauce (click on link for recipe)
2 medium size Tomatoes, sliced
1/2 a Red Onion, thinly sliced
1 small head Romaine Lettuce, shredded
Preheat a large skillet on medium, add ghee or olive oil and swirl to coat. Season chicken with lemon pepper, oregano and salt, and add to the skillet. Fry 10-12 minutes, or until done, turning at the 5 minute mark. When chicken is done, cover to keep warm and set aside. While chicken is cooking make the tzatziki sauce and chill. While chicken is keeping warm, prep the veggies. Once veggies are prepped you can assemble your gyros. Add two to three chicken tenders to the flatbread, then add tomatoes, lettuce and onions, and top with tzatziki sauce.
Add a side of pasta and/or a side salad to round out your meal, and you have a great weeknight dinner!
