If you like Chick-fil-A’s Superfoods Salad, you’re going to love this salad! Regardless if you’ve had their salad or not, this is a great healthy and tasty salad. The trick to this salad is massaging the dressing into the kale, and letting it sit out at room temperature for a hour before serving. Doing so, helps the kale to soften up, but still remain slightly crisp. This recipe makes a lot of salad, but it keeps well even with the dressing, so you can refrigerate the leftovers for the next day.
Ingredients:
1 16 oz. bag of chopped Kale, rinsed and dried (I use a salad spinner)
2 cups Broccolini (baby Broccoli) chopped into bite-size pieces
1/2 cup dried Cherries
1/2 cup toasted Walnut pieces (toasting directions below)
For the Dressing:
1/4 cup Extra-Virgin Olive Oil
1/4 cup Organic Real Maple Syrup
The Zest of one whole Lemon
2 Tbs. Raw Unfiltered Apple Cider Vinegar
2 Tbs. Fresh Squeezed Lemon Juice
1/2 tsp. Sea Salt
1/4 tsp. Fresh Cracked Pepper
Directions:
Add all dressing ingredients into a large salad bowl, whisk until well combined. Add the washed and dried Kale, mix thoroughly. Then, using your hands, or salad tongs, massage the dressing into the Kale leaves for about five minutes. Let the kale rest at room temperature for at least one hour. Finally add the remainder of the salad ingredients, toss lightly and serve.
For toasting Walnuts: line a small baking sheet with parchment paper, spread out Walnut Pieces and toast in oven (I use a toaster oven) at 300º F. for 3-5 minutes. Watching carefully as they scorch easily.
