Here’s a great low-carb and tasty alternative to a classic.
Ingredients:
1 large head Cauliflower
½ cup Onion, finely chopped
2 cups Roma Tomatoes, chopped
1 Tbs. olive oil
2 tsp. Cumin
1 tsp. Chili Powder
1/2 tsp. Coriander
½ tsp. Garlic Powder
1/8 tsp. Cayenne Pepper
Salt and Pepper to taste (I used 1 tsp. and ¼ tsp. respectively)
Juice of 1 Lime
Cut the cauliflower into large chunks and process in batches in a food processor. Pulse until the cauliflower has broken down into small rice sized pieces, about 5-10 pulses.
Preheat a large sauté pan on medium for 2 minutes, add Olive Oil and swirl to coat, sauté the onion until translucent. Add Cauliflower rice, Tomatoes and Spices saute for 5-7 minutes until the cauliflower because tender then add Lime juice.
Garnish with fresh chopped Cilantro.
