My teenagers, who are always hungry, are loving this hearty stick-to-your-ribs dinner. It incorporates chicken and all the components of a loaded baked potato into one fantastic and tasty dish. I love it because it’s so easy! All it takes is a little prep work and you’ve got a terrific meal for a busy weeknight. You can even do some of the prepping the night before to make it even faster.
Ingredients:
4 large Baking Potatoes, cubed
1½-2 lbs. Boneless/Skinless Chicken Breasts, cubed
½ cup Olive Oil, divided
2 tsp. Salt, divided
1/2 Tbs. fresh Cracked Pepper, divided
1/2 Tbs. Paprika, divided
1 Tbs. Garlic Powder, divided
2 Tbs. Louisiana Style Hot Sauce, divided
2 cups Sharp Cheddar Cheese, shredded
6-8 slices Bacon, cut in ½ inch pieces and fried
½ cup sliced Green Onion, green tops only
sour cream
Directions:
In two separate large bowls mix olive oil, salt, pepper, paprika, garlic powder and hot sauce. Add potatoes to one bowl and chicken to the other bowl.
Let the chicken and potatoes marinate while you cook the bacon, or for 30 minutes.
Place potatoes in the bottom of crock pot, then add chicken on top of potatoes,and add half of the bacon.
Set crock pot on high for 3 hours, then on low for the last hour and a half, adding the cheese, green onion and the rest of bacon at that time.
Top with a dollop of Sour Cream before serving.
Add a mixed green salad and you’ve got a hearty and healthy easy weeknight dinner.
