I have a great recipe for homemade breakfast sausage. I like to make them myself, that way I can control the ingredients, and season them the way I like.
I’m fortunate enough to be able to buy my pork from a local small family farm. It’s pasture-raised and humanely kept.
The sausage recipe is a simple seasoning blend that you mix with fresh ground pork, refrigerate overnight, or up to 24 hours, then form into patties and fry for a tasty all natural breakfast sausage. You can also crumble and fry for breakfast casseroles, or other dishes.
Ingredients:
1 lb. fresh ground Pork
3/4 tsp. Rubbed Sage
3/4 tsp. Salt
3/4 tsp. Dried Parsley
1/2 tsp. Ground Black Pepper
1/4 tsp. Thyme
1/8 tsp. Ground Nutmeg
1/8 tsp. Red Pepper Flakes
Directions:
In a medium size bowl, break up pork, add spices and mix well. Cover and refrigerate for at least 6 hours, or up to 24 hours, for flavors to meld.
To cook, form into patties, or leave crumbled. Cook a few patties in a large heavy skillet, preferably cast iron, over medium-high heat until browned and cooked through, 3 to 5 minutes per side.
