Selina’s Energy Bites!


These are Nutrient Dense, Protein Packed, Fiber Rich energy bites, with just the right amount of sweetness.


1 cup Organic Raw Cashews (whole, or pieces)
1 cup Organic Medjool Dates (pitted)*
3 Tbsp. Organic Raw Cacao Nibs
2 Tbsp. Organic Chia Seeds
2 Tbsp. Freshly Ground Organic Flax Seeds **
2 Tbsp. Organic Raw Shelled Hemp Seeds
3 Tbsp. Organic Virgin Coconut Oil
1 Tbsp. of Organic Nut Butter of Choice (Cashew, Almond, Peanut) Preferably homemade
1 tsp. Organic Vanilla Extract



Start by adding the pitted Medjool Dates to the bowl of a food processor. Pulse 5-10 times depending on the size of the dates. You want chunky pieces, not too small, because you will continue to process the dates as you add the other ingredients. Next, add the cashews. Pulse again, 5-10 times. I used whole cashews, so I pulsed 10 times.  Add the rest of the ingredients, and pulse 10 times. Transfer mixture to medium size bowl, and chill for at least 1 hour. The mixture will be crumbly. Using a tablespoon, scoop a heaping spoonful into the palm of your hand, and press into about a one inch a ball form. Store in refrigerator in air tight container, for up to two weeks. Makes 2 dozen.


*It’s better to buy whole dates, and pit them yourself. In my opinion, they have a better flavor. It’s a little messy, and takes a little longer, but it’s worth the effort.

**Always buy Whole Flax Seed, and grind as needed, using a spice grinder or coffee grinder. Once flax seeds have been ground, they oxidize rather quickly, and lose their healthy Omega 3 benefits.
